Whole Chicken Butchery at Home

Join Meaty for Whole Chicken Butchery at Home: our virtual class on how to source, cut, and cook poultry. 

Using a whole pasture-raised chicken sourced from a local farm, we’ll cover:

  • Sourcing - The animal welfare, environmental, social and racial justice implications of how chickens are raised. You’ll learn what to look for in farms, butcher shops, and grocery stores so that you can buy poultry that is flavorful and supports a better meat system.

  • Butchery - Guiding principles for at-home butchery, and a step-by-step, hands-on tutorial on how to cut a whole bird into 8 pieces (wings, drumsticks, thighs, and boneless breasts)

  • Cooking - Which parts are best for which kinds of recipes, and how to maximize the number of meals you can get out of a single bird.

If you live in the Boston area, we will arrange for you to pick up your chicken from our farm partner, Lilac Hedge Farm, at a local farmers market. Your ticket includes both the cost of the class ($60) and the cost of the chicken ($25), which we pass through directly to the farmer.

If you live anywhere else, we’ll send you tips for finding a well-raised chicken close to home, and you’ll only pay for the cost of the class.

Either way, you’ll leave class with a freshly-cut chicken parts ready for a quick, delicious dinner and newly-formed butchery skills essential for any home cook.
